
PÉT PROJECT
Naturally sparkling wines made using the ancestral method.
Pét Project is Foundry Vineyards’ sister label, focused on low-intervention sparkling wines made using the ancestral method—one of the oldest processes for creating sparkling wine. The French refer to these wines as pétillant-naturel (naturally sparkling), or pét-nat for short. Pet Project began in 2018 as a way to make sparkling wine that feels direct and alive—fresh, bright, and meant to be shared.
Pét-nat captures the liveliness of fermentation just before it’s completed. We bottle the wine while it’s still finishing fermentation, and the remaining CO₂ becomes the sparkle. The result is a youthful, naturally sparkling wine with vivid aromatics, a softer mousse, and a very food-friendly feel.
Pét Project is made by Jay Anderson, Foundry Vineyards’ winemaker. Jay approaches sparkling wine with a practical, detail-driven mindset—paying close attention at each step and keeping the process thoughtful and straightforward so the wine stays expressive. His background as a chef also shows up in the way these wines are built for the table: bright, textured, and easy to pair with food.
