Naturally sparkling wines made using the ancestral method.
Pét Project makes pét-nat: naturally sparkling wine crafted through the ancestral method, a centuries-old approach that predates Champagne. Born in 2018, Pét Project set out to make sparkling wine that feels direct and alive: fresh, bright, and meant to be shared.
Crafted from primarily organic fruit with native fermentation and a minimalist hand, the wine is bottled while fermentation is still finishing, so the remaining CO₂ becomes the sparkle on its own. Guided by the same values that shape good cooking (purity, freshness, restraint, and respect for the ingredients), the result is a youthful, naturally sparkling wine with vivid aromatics, a softer mousse, and a very food-friendly feel: serious in craft, without the formality of traditional sparkling wine.
Pét Project is made by Jay Anderson, Foundry Vineyards' winemaker. Jay approaches sparkling wine with a practical, detail-driven mindset: paying close attention at each step and keeping the process thoughtful and straightforward so the wine stays expressive. His background as a chef also shows up in the way these wines are built for the table, bright, textured, and easy to pair with food.
